The following information is included with each pudding:
Serving Suggestion for TrugsPuddings:
1. Remove outer wrapping which includes decorative cellophane and the internal shrink-wrap; in its foil basin, steam pudding minimum two hours before serving (steam on a back burner during dinner preparation).
Microwaving is not recommended for our traditional puddings.
If you don't have a steamer, place pudding/basin on an inverted ovenproof dish in a covered saucepan in an inch or two of water. Heat water to simmering; top up water as necessary to steam for 2 hours.
2. Remove pudding from foil basin (careful; it's hot!). Invert to heatproof plate.
3. If you're going for the flambé: heat half a cup of brandy (microwave in an ovenproof measuring cup for 30 seconds) then pour it over the pudding. Dim the lights and ignite immediately.
When the cheers die down, serve hot pudding with cold hard sauce which will melt deliciously into the pud.
Important: be sure to observe all safety rules for open flame.
Here's the TrugsRecipe for hard sauce:
Cream ¾ cup soft butter with 1 ½ cups icing sugar; add 2 tablespoons brandy. Refrigerate overnight (and you'll see how it got its name). Serve cold over hot pudding. If there's any left, it's also wickedly good on raisin toast for Boxing Day brunch.
